Can every integration work in real time?

That depends on the systems, interfaces and requirements involved. Transfer intervals and limitations are defined within the project.

Where do product text and images come from?

Master data and commercial data may come from the ERP. A PIM/DAM such as OMN can supply enriched product content and media.

What information do you need for an initial assessment?

ERP product and version, Shopware version, data objects, approximate volumes, and existing interfaces and documentation.
